Yesterday I had a salad, a real one! With lettuce and carrots and red wine vinegar! Sometimes, I can actually feel my body absorbing the vitamins it has missed and it's this wonderful feeling. Also, I successfully made breakfast cereal with oatmeal, nuts, raisins, and coconut. So now I can do the lazy thing int he mornings I teach instead of getting up at the crack of dawn to cook some eggs or make pancakes. Plus, I think my cereal is waaay healthier than most commercial brands.
It is:
4 cups oatmeal
3/4 cup assorted nuts (walnuts, almonds and pumpkin seed)
1/4 cup coconut
1/2 cup juicy raisins (assorted: golden and dark)
1/4 cup honey
1/4 cup peach juice
1/2 tablespoon vanilla
You just stir it all together (except the raisins), put it on a lightly oiled oven tray, and cook in a medium oven for 10 minutes, then add the raisins and bake for another 5.
This is great and lasts for 4 days if it's just one person eating it.
